What does it take to qualify for a professional kitchen position overseas?
It takes more than knowing how to cook a good meal. International employers look for chefs who demonstrate professional skills, discipline, consistency and the ability to work in a demanding kitchen environment.
For culinary professionals hoping to build an international career, a trade test can be an important step towards employment abroad.
On November 23, 2026, First Gourmet Academy will host an international culinary trade test in cooperation with a Scandinavian recruitment agency. Further assessments will take place on November 26 and 27 in Cebu, with First Gourmet Academy Director Mats Loo accompanying the agency to help organize and conduct the assessments.
But what exactly are the assessors looking for when they evaluate a chef?
1. Technical Culinary Skills
The first and most obvious consideration is the candidate's actual cooking ability.
An assessor wants to see whether a chef understands professional cooking techniques and can apply them correctly. This includes knife skills, preparation methods, cooking techniques, seasoning, temperature control and the proper handling of different ingredients.
It is not necessarily about producing the most complicated dish. A candidate who can prepare a relatively simple dish correctly, consistently and professionally may demonstrate more competence than someone attempting something complicated without sufficient control.
2. Organization and Kitchen Discipline
A professional kitchen is a working environment where organization is essential.
Assessors pay attention to how candidates prepare their workstations, organise ingredients, manage equipment and approach their assignments.
Mise en place is particularly important. A chef should understand how to prepare and organise everything before starting the actual cooking process.
An organised chef works more efficiently, makes fewer mistakes and helps maintain a smooth kitchen operation.
The ability to work cleanly and systematically is therefore an important indication of professional competence.
3. Hygiene and Food Safety
Food safety is not an optional skill. It is a fundamental responsibility for every professional chef.
During an assessment, candidates should demonstrate that they understand personal hygiene, correct food handling, cross-contamination prevention, temperature control and the importance of maintaining a clean working environment.
Proper handwashing, wearing the uniform the correct way and the correct use of kitchen equipment are all part of professional kitchen practice.
A chef may have excellent cooking skills, but without proper hygiene and food safety awareness, those skills are not sufficient for employment in a professional kitchen.
4. Time Management and Working Under Pressure
Professional kitchens operate according to schedules and service requirements. Chefs must be able to complete their assignments within the available time without compromising quality.
Assessors therefore look at how candidates plan their work, prioritise tasks and manage their time.
Do they understand which preparations need to be completed first? Can they work efficiently without becoming disorganised? Can they maintain their standards when time is limited?
Working under pressure is part of everyday life in many professional kitchens. An international employer needs to know that a candidate can handle these demands.
5. Consistency and Attention to Detail
Producing good food is not necessarily an indication of professional competence.
In a restaurant or hotel kitchen, customers expect the same quality every time they order a particular dish.
Assessors look for attention to detail, correct seasoning, cooking temperatures, texture, presentation and consistency.
A professional chef understands that quality must be maintained throughout the working day, not just when preparing a dish for an assessment.
6. Profess
ional Attitude and Communication
Technical skills are important, but attitude can be equally significant.
A chef must be able to work as part of a team, communicate with colleagues, listen to instructions and accept feedback.
Assessors may also observe how candidates react when something does not go according to plan.
Are they willing to learn? Do they remain calm? Do they take responsibility for their work? Do they demonstrate respect towards others?
International employment often means working with colleagues from different nationalities and cultural backgrounds. Professional communication, adaptability and a positive attitude are therefore valuable qualities.
7. The Ability to Work in an International Kitchen
Working overseas can be very different from working in a familiar kitchen environment.
Chefs may need to adapt to different working methods, kitchen standards, ingredients, equipment and expectations.
Employers are therefore interested in candidates who are flexible, open to learning and capable of adapting to a new working environment.
A successful international chef is not simply someone who knows how to cook. It is someone who can become a reliable member of a professional kitchen team.
More Than Just Cooking Skills
A culinary trade test is an opportunity for employers to evaluate the complete professional profile of a candidate.
Cooking ability is essential, but it is only one part of the assessment. Organisation, hygiene, consistency, time management, communication and professional attitude all contribute to the overall impression.
At First Gourmet Academy, we believe that professional culinary education must prepare students for the realities of working in professional kitchens, both in the Philippines and internationally.
